Food insecurity is a pressing public health issue characterized by limited or uncertain access to nutritious and culturally acceptable food (Lucke et al., 2019; Morales & Berkowitz, 2016).. Purpose: This study examines the impact of food insecurity on health disparities and evaluates the potential role of community gardens in improving food access and promoting health equity. Methods: Using a qualitative approach, semi-structured interviews were conducted with 11 participants residing in Southwest Riverside County, California. Demographic data were analyzed alongside inductive thematic analysis to identify core themes and patterns. Results: The study highlights a strong correlation between food insecurity and adverse health outcomes. Participants perceived Westernized diets as widely available yet detrimental to health. Community gardens emerged as promising interventions to mitigate food insecurity and promote healthier dietary habits. Conclusion: Integrating ethnic crops into community gardens may effectively address food access barriers in minority communities and promote health equity. The study advocates for pilot programs incorporating culturally relevant foods into garden-based interventions.
